Easy Oven Roasted Brussel Sprouts Recipe

I’m giving you the secret to perfectly caramelized oven baked Brussel sprouts with crunchy outer leaves and soft, tender insides. This easy side dish comes together quickly and is the perfect complement to almost any meal.

I’ll admit that Brussels sprouts have a bad reputation and have never been one of my favorite veggies for taste. But they have so much going for them, including being fresh, hearty, healthy, and pairing well almost anything. I’ve wanted to like them, but I’m sensitive to bitter flavors.

After trying them several ways (and finally getting some amazing Brussels sprouts as an appetizer at a restaurant), I’m a firm believer that the key to liking Brussels sprouts is preparing them the right way.

If you’re also sensitive to bitter flavors, don’t bother boiling or steaming them. They’re mushy and gross. Now you can say goodbye to soggy, overcooked Brussels sprouts!

If you’ve never tried roasting them, that cute, little cabbage-looking vegetable may become a new favorite! I will only eat crispy, oven roasted brussel sprouts because this cooking method caramelizes the sprouts and dramatically improves the flavor.

Roasting gets rid of the bitter taste and the smell that most people don’t like about Brussels sprouts. The result? Tender, sweet, delicious bite-sized morsels.

How To Choose Good Brussels Sprouts

If you don’t know a good Brussels sprout from a bad one, look for those that are a vibrant green color, with no bruising or yellowing on the leaves. 

Ingredients Needed

All you need are 4 simple ingredients (if you count salt and pepper) for the perfect side dish that’s as healthy as it is tasty!

  • Brussels sprouts
  • Olive oil
  • Salt and pepper
  • Garlic – optional, but delicious! You can use either minced garlic or garlic powder.

How To Make Oven Roasted Brussel Sprouts

This recipe is super simple and perfect as a side dish for weeknight dinners or special occasions like hosting guests and holiday menus too!

  1. Preheat oven – Heat oven to 425°F.
  2. Prepare Brussels sprouts – Trim stem ends and remove any yellowed outer leaves. Cut in half lengthwise, and rinse and pat completely dry.
  3. Season – In a large bowl, toss Brussels sprouts with a little olive oil, salt, pepper, and garlic (if using).
  4. Arrange on pan – Spread out in a single layer on a large baking sheet pan, cut sides down for best browning.
  5. Roast in the oven – Bake until edges are golden brown and crispy, and centers are tender. Avoid stirring or flipping Brussels sprouts during cooking so that they caramelize.

Oven Roasted Brussels Sprouts Expert Tips

  • Prep Brussels sprouts: Remove each sprout from the stalk or stem (if attached) by snapping or cutting them off. Rinse and dry on paper towels. Cut sprouts in half (or even quarters for larger sprouts). 
  • Get crispier sprouts by making sure they are completely dry before adding them to the baking sheet. NOTE: damp sprouts may steam instead of roasting.
  • Keep a little space between sprouts (in a single layer) to help them cook evenly.
  • Arrange on the cookie sheet with cut-side down for the best caramelization.
  • Cook time is dependent on your oven! Oven temperatures can vary, so keep a close eye on your roasting Brussel sprouts to avoid burning them. 

How To Serve Roasted Brussels Sprouts

  • Side dish for weeknight meals! You can make them ahead of time during weekend meal prepping to enjoy as leftovers. Or, they are quick and easy enough to make on weeknights and enjoy fresh with your favorite entrees. They are amazing with dishes like
  • Healthy side option for holiday dinners – If you find your Thanksgiving table or Christmas table filled with heavy foods, add something fresh and easy like these oven-roasted Brussel sprouts or even some Green Beans Almondine.   • If you’re feeling brave, add them to your favorite mac and cheese!

Variations To Try

Here are some ideas to add additional flavor to your crispy Brussels sprouts and keep them fresh and interesting!

Lemon – For a touch of brightness, give your roasted Brussels sprouts a splash of squeezed lemon or some lemon zest.

Caramelized onions – Because…yeah. Caramelized onions make everything taste amazing!

Bacon – Add chopped cooked bacon or real bacon bits during the last 4-5 minutes of roasting.

Balsamic – Drizzle with balsamic vinegar or balsamic glaze after roasting. Super yummy!

Parmesan – Sprinkle grated Parmesan during the last 5 minutes or so of baking.

Toppings – Top with any combination of dried cranberries, chopped pecans (or other nuts), herbs, red pepper flakes, or pepitas just before serving.

Maple Syrup – For a sweet touch, toss the roasted sprouts in some maple syrup and bake for 2 more minutes to give the sprouts time to soak up the syrup.

Oven Roasted Brussels Sprouts Storage Tips

Store leftovers in an airtight container for up to 4 days. To reheat, spread them out on a baking sheet and put them in a 400°F oven for 5-7 minutes so they get crispy again. Alternatively, you can also put them in an air fryer for 3-4 minutes at 375°F.

I don’t recommend freezing your roasted Brussel sprouts because they will become soggy and mushy.
