These Rainbow St. Patrick’s Day Cupcakes are so easy to make – kids of all ages will love helping you assemble and add all the decorations. They’re certainly my new favorite St. Patty’s Day treat!
St. Patrick’s Day isn’t really complete without a rainbow and a pot of gold!
We would all like to find that proverbial pot at the end of the rainbow, including me. 😉
When we say we would like to find that pot of gold, what we actually mean is that we are searching for something that we would very much like to achieve but in reality, it will be very difficult.
I think our “pot of gold” is something we do for our family, kids, and loved ones to make things more fun, enjoyable, and exciting for them.

Ingredients Needed For Rainbow St. Patrick’s Day Cupcakes Recipe
Here’s everything you’ll need to make these cupcakes! I’ve included links to some items to make them easier to find.
- Yellow Cake Mix – plus additional ingredients per instructions OR your favorite recipe.
- Vanilla Frosting – in a piping bag
- Chunky Gold Edible Glitter – may be harder to find in the store but can order online
- Themed Sprinkles – shamrock sprinkles or green and gold
- Green & Gold M&M’s
- Rolo Candies – individually wrapped or unwrapped in a sleeve, your preference
- Sour Rainbow Candy Ribbons – this adds that perfect colorful and themed piece to these cupcakes!
- Cupcake liners
How To Make Rainbow St. Patrick’s Day Cupcakes
Here’s how to make these cupcakes!
Step 1
Place cupcake liners in a muffin tin. Prepare and bake the cupcakes as per the directions on the cake mix box.
Step 2
After the cupcakes have been allowed to cool completely, scoop out the center of the cupcakes with a spoon. Fill the center with M&M’s and sprinkles.
Step 3
Fill or pipe a small amount of frosting over the opening. Then frost the entire top of the cupcake.
Step 4
Sprinkle theme decorations on top of the cupcake.
Step 5
Pipe or spoon a small dab of frosting on the top of a piece of Rolo candy. Then carefully roll the icing in the chunky gold edible glitter to create your pot of gold.
Step 6
Put a Rolo on top of each cupcake.
Step 7
Cut the rainbow candy to size and place each end on the sides of the Rolo candy so that it looks like a rainbow over the pot of gold.
Rainbow St. Patrick’s Day Cupcakes Recipe Notes And Tips
- If you do not have a piping bag and tip, use a knife to spread the frosting on your cupcake.
- I would suggest adding the rainbow strip no more than about an hour or less before serving so it doesn’t start to droop or lose its shape.
- If you are using the frosting in the plastic containers, you may have to mix in a little powdered sugar to make it a little thicker so that the rainbow ribbon will hold up.
- Put the glitter topped Rolos in the refrigerator before putting them on our cupcakes. This will make them a little more ‘sturdy’ when placing them on the cupcakes.

Variations of St. Patrick’s Day Cupcakes To Try
- Color your cake batter in the colors of the rainbow. Layer each color as you put the batter into the muffin liners just before baking.
- Add some food coloring to your icing if you want to add a splash of color to the top of your cupcakes. Sky blue or light green would look soooo pretty on these cupcakes.
- Place a couple marshmallows on the outer side of the rainbow to make it look like each end of the rainbow is in the clouds. This will help to keep the rainbow strip more steady as well.

I would suggest that you not freeze these cupcakes once they have been decorated. The varied types of candy may not freeze well and the texture and flavor will likely be affected once the cupcakes are thawed.
Can I make these St. Patrick’s Day Cupcakes ahead of time?
If you want to make the cupcakes ahead of time would definitely be a good idea.
However, I would suggest that you wait to decorate until an hour or 2 before the event or time that you are going to serve them. This will ensure that the rainbow stays in position and the sprinkles don’t get too soft.
How long will my cupcakes stay fresh?
You should keep the leftover cupcakes in an air-tight container or a resealable plastic bag in the refrigerator. The decorated cupcakes will keep for up to 2 – 3 days in the fridge.

Ingredients
- 1 box yellow cake mix + additional ingredients per instructions OR your favorite recipe
- Vanilla frosting in a piping bag
- Chunky gold edible glitter
- Themed sprinkles
- Green & gold M&M’s
- Rolo candies
- Sour rainbow candy ribbons
Instructions
- Bake cupcakes per recipe directions and cool completely.
- Spoon out the center of the cupcake and fill with M&M’s and themed sprinkles.
- Pipe a small mound of frosting over the opening then pipe frosting on the whole cupcake.
- Add themed sprinkles over the frosting.
- Pipe a small dab of frosting on the top of the Rolo candy and gently roll in the chunky gold edible glitter - this creates your pot of gold.
- Place the Rolo on top of the cupcake.
- Place the ends of the rainbow candy on either side of the Rolo candy to from the rainbow over the pot of gold.
- Serve & enjoy!
