Rice Krispie Chocolate Chip Cookies
These Rice Krispie Chocolate Chip cookies are made like chocolate chip cookies with the addition of Rice Krispies for amazing texture. They’re sweet, soft, chewy, crispy, gooey, and delicious in ALL the right ways!
Chocolate chip cookies are probably my favorite cookie (with peanut butter cookies coming in a close second), but I wanted to come up with something a little different than the classic chocolate chip cookie.
One day I was making chocolate chip cookies and was trying to think of ways to add a little crunch in some way other than chopped nuts.
After a lot of thinking and brain-wracking and even a little internet research, I came up with the idea to add some Rice Krispies and try that out. I LOVE it!
Nuts add good texture, but they’re almost TOO hard (for me). That’s why I love these Rice Krispie Chocolate Chip Cookies – they have that amazing crunch without the hard texture that turns me off.

Ingredients Needed For Rice Krispie Chocolate Chip Cookies
Here’s what you’ll need to make these super yummy cookies!
- All-Purpose Flour – allows the flavor of the other ingredients to shine through
- Salt
- Baking Soda
- Cornstarch – helps give the cookies a tender and crumbly texture
- Butter – real butter is best but margarine will work just fine
- Brown Sugar – light or regular
- White Sugar – granulated sugar
- Eggs
- Vanilla Extract – vanilla boosts the flavor of all of the other ingredients
- Rice Krispie Cereal – try to avoid the added sugar variety
- Mini Marshmallows
- Mini Chocolate Chips – regular size chocolate chips will work as well
How To Make Rice Krispie Chocolate Chip Cookies
These cookies are a snap to make! They look like they took hours, but the process is quick and easy.
Step 1
Begin by preheating the oven to 350 degrees.
Step 2
Stir together flour, salt, baking soda, and cornstarch in a small mixing bowl. Then set aside.
Step 3
Beat white sugar, brown sugar, and butter together in a large mixing bowl until light and creamy, approximately 2 minutes.
Step 4
Beat in eggs and vanilla until just incorporated.
Step 5
Gently stir in flour mixture until just combined. Be careful not to over mix.
Step 6
Finally, stir in rice krispies, mini marshmallows, and chocolate chips.
Step 7
Using a cookie scoop, portion out dough in 1 TBSP amounts onto a lined or greased cookie sheet.
Step 8
Bake until golden brown, 8 – 10 minutes. Watch closely so as to avoid burning the marshmallows.
Rice Krispie Chocolate Chip Cookies Recipe Notes And Tips
- Let your cookies cool on the baking sheet at least 10 minutes after removing them from the oven. This allows time for them to firm up a bit so they can be easily transferred to a wire rack to cool completely.
- Shape the dough into uniform size balls and space them evenly at least 1 inch apart on the baking sheet. The cookies will bake evenly and will all be uniform in size.
Variations of Rice Krispie Chocolate Chips Cookies To Try
- Try different chips. Add in butterscotch chips in place of or in addition to the chocolate chips. Or try some peanut butter, mint chocolate or white chocolate chips.
- Add Color. Use the holiday rice krispies if available and add a beautiful pop of color to your cookies.
- Try different flavor. Add in the chocolate rice krispies in place of the regular for added chocolatey goodness.
- Add protein. Peanut butter is a nice addition to the cookies but be sure to use the creamy variety.
- Go sweet and salty. For a yummy sweet and savory bite, add a sprinkle of sea salt on the top of each cookie as soon as it comes out of the oven.
- Add texture. If you prefer a little added nuttiness, add in some chopped walnuts or pecans.

How long will my Rice Krispie Chocolate Chip Cookies stay fresh?
You can store them at room temperature on your counter in an air-tight container for up to 2 – 3 days. Any longer than that and the rice krispie cereal will tend to get a bit soft.
I would recommend placing waxed paper or parchment paper between the layers of cookies to store.
Can I freeze the Rice Krispie Chocolate Chip Cookies and if so, for how long?
You can freeze these cookies for as long as 4 – 6 weeks in an air-tight, freezer-safe container. Just keep in mind that freezing them may change the texture of the rice krispies in the cookie once they are thawed.
Should I use salted or unsalted butter in the Rice Krispie Chocolate Chip Cookies?
Unsalted butter allows you to control the amount of salt whereas salted butter could cloud the flavor of the cookie. As always, you use what you like best when baking.

Ingredients
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1 tsp baking soda
- 2 tsp cornstarch, less if you want a less fluffy cookie
- 3/4 cup butter, softened at room temperature
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup rice krispie cereal
- 1 cup mini marshmallows
- 1 cup mini chocolate chips, to taste
Instructions
- Preheat oven to 350F.
- In a small bowl, stir together the flour, salt, baking soda and cornstarch. Set aside.
- Place butter and both sugars in a large bowl and beat until light and creamy, about 2 minutes.
- Beat in the eggs and vanilla until just incorporated.
- Stir in the flour mixture until just combined, being careful not to over mix.
- Stir in the marshmallows, rice krispies and chocolate chips, as desired.
