St. Patrick’s Day seems to be one of those holidays that people either celebrate by going all out or don’t really celebrate at all.

I happen to love St. Patrick’s Day. During my elementary and secondary school years, our school name/mascot was the Fighting Irish. So as you can imagine, St. Patrick’s Day was sort of a big deal.

And to this day, St. Paddy’s Day is still one of my favorite days.

What exactly is St. Patrick’s Day and why do we celebrate it? That is a great question!

St. Patrick was the patron saint of Ireland and this day observes his death. However, the holiday has developed into a day of celebration of the Irish culture which includes special foods, dancing, music parades, and of course a whole bunch of green.

How to Make St. Patrick’s Day Candy Bark

Step 1

Prepare a baking sheet by lining it with parchment paper.

Step 2

Begin by putting the white chocolate chips in a microwave-safe bowl. Melt in the microwave in 30 seconds intervals, stir until completely melted and smooth.

Step 3

Pour the melted chocolate chips onto the baking sheet and spread them out evenly.

Step 4

Next, melt the almond bark and add in the food coloring. Drizzle over the melted white chocolate chip base. (You can use colored candy melts for this step instead of the almond bark.)

Step 5

Now place the lucky charms marshmallows on top of the melted almond bark and gently press down.

Step 6

Sprinkle themed sprinkles and edible glitter on the top of the almond bark.

Step 7

Place the sheet pan in the refrigerator to set. Once the almond bark is set, break apart into desirable pieces and serve.

  • Be sure to allow the candy bark to set in the refrigerator for up to 2 hours before breaking and serving.
  • You can cut the candy bark into triangles or abstract squares if you prefer. Just be sure to use a very sharp knife if you are looking for clean cuts.
  • Once you have drizzled the almond bark on top, make sure you immediately add the toppings before the bark hardens. Otherwise, all that added yumminess will not dry with the almond bark and will fall off…..and you definitely don’t want that to happen. LOL

Variations Of St. Patrick’s Day Candy Bark To Try

  • Candy bark is not just for St. Patrick’s Day. 😉 Change up the colors or the food coloring, glitter and themed sprinkles to celebrate your favorite holiday. For example, use red, white and blue colored almond bark, sprinkles and star candies for 4th of July or red, green and gold almond bark, sprinkles and themed sprinkles for Christmas.
  • Use mint flavored chocolate chips as the base for a zip of pepperminty flavor.
  • If the Lucky Charms marshmallows are not an option, use crushed chocolate sandwich cookies, pretzels or malted milk balls.
  • Milk chocolate or dark chocolate chips would be a substitution for the white chocolate chips.
  • Color the almond bark different shades of green. Divide the melted almond bark into 2 – 3 different bowls and color with different shades then drizzle one or more of the variations on the white chocolate chips.

Will the candy bark harden and set up if not placed in the refrigerator?

Ideally, it will harden and set more quickly if placed in the refrigerator for 15 – 30 minutes but you can let it cool and set at room temperature. It make take 2 – 4 hours for it to completely harden before you can break it into pieces.

What is the best way to store my extra almond bark?

If you have unused almond bark, it will keep at room temperature for up to 2 – 3 weeks stored in an air-tight container.

Freezing it is probably the best option. It will keep up to 2 – 3 months if wrapped in plastic wrap and then put in a freezer-safe container or freezer bag. Wrapping it in plastic wrap will help to keep the moisture out.
