The holidays are filled with calorie-loaded dishes that add pounds to the waistline. Well, this dish may not be the absolute healthiest, but it IS veggie-based and tastes INCREDIBLE.

Tender cauliflower florets baked with butter, sour cream, and cheese. If you use this in place of your stuffing, you won’t even miss the stuffing thanks to all the flavor this casserole packs.

Substitution note: feel free to sub full fat plain Greek yogurt for the sour cream. It will taste amazing and add protein while reducing the fat and empty calories!

Feel free to add bits of bacon if you want even more flavor.

Ingredients Needed For Cauliflower Stuffing Casserole

  • Cauliflower Florets – frozen will work but fresh is best
  • Sour Cream – regular or lite
  • Cheddar Cheese
  • Better Than Bouillon (chicken flavor) – or chicken bouillon granules
  • Ground Mustard – stronger than prepared mustard
  • Butter – use unsalted butter if you want to control the amount of salt in the dish
  • Stuffing Mix – your favorite boxed or bagged brand will be great
  • Walnuts – chopped

How To Make Cauliflower Stuffing Casserole

Just follow these steps and in a little bit, you’ll have a scrumptious side dish like no other!

Step 1

Prepare a 9 x 13-inch baking dish with non-stick cooking spray and pre-heat the oven to 375 degrees.

Step 2

Mix sour cream, cheese, bouillon, and ground mustard until well combined in a large bowl.

Step 3

Fold in cauliflower.

Step 4

Spread the entire mixture evening into a baking dish.

Step 5

Sprinkle the stuffing mix and walnuts on top of the cauliflower mixture.

Step 6

Place the cubed butter on top of the stuffing mixture.

Step 7

Bake for 20 – 25 minutes until the top is golden brown.

Cauliflower Stuffing Recipe Notes And Tips

  • Make sure the cauliflower is cut into bite size pieces. This will ensure more even cooking. Also, bite-size pieces are easier to serve and eat.
  • Regular or lite sour cream will work best in this recipe. Fat free will not provide the creaminess and that regular or lite will.
  • Want a healthier alternative? Substitute Greek Yogurt for the sour cream.
  • Frozen cauliflower florets will work, but it would be best to use fresh cauliflower. Frozen cauliflower will contain more water which may make the stuffing a little more watery.
  • Be sure to add salt and pepper to taste. The recipe does not call for it but you may find that you need some added salt and pepper that doesn’t come from the other ingredients.

Variations Of Cauliflower Stuffing Casserole To Try

  • In addition to the cauliflower, add some extra vegetables such as onions, celery and mushrooms. I would saute them in butter to make them a little more tender before adding them to the stuffing mixture.
  • Add in some crumbled sausage or bacon to give the stuffing a little more zip.
  • Sprinkle some shredded cheese over the top of the casserole before baking. I would not cover it with cheese, just a light sprinkling to give it some color and a little extra flavor.
  • If walnuts are not your preference but you would like like to add in some nutty flavor, think about adding in pine nuts, pecans, hazelnuts or macadamia nuts.

Can I make the Cauliflower Stuffing ahead of time?

The stuffing is perfect to make ahead of time! Prepare it the day prior, then on Thanksgiving or Christmas re-heat it at 350 degrees just before serving.

How long will the leftovers keep in the fridge?

Leftovers? 😲 That’s not even gonna happen!

Just kidding. If you happen to be fortunate to have any leftovers to enjoy again later, they will keep for up to 3 – 4 days in the refrigerator.

Can I freeze the Cauliflower Stuffing?

Definitely! You will need to let the stuffing dish cool completely in the refrigerator. Then you will need to place the stuffing you wish to freeze in a freezer bag or freezer-safe container.

Write the date and the name of the contents on the bag or the container. This will help you keep track of what you froze and how long it has been in the freezer.

What is the best way to re-heat the Cauliflower Stuffing?

You can re-heat the stuffing in the microwave at 50% until you reached the desired temperature. Or you can reheat in the oven at 350 degrees.

If the casserole has been in the freezer, let it thaw completely in the refrigerator or at room temperature before re-heating.
