I always keep things simple for school lunches. With 3 kids, job, and everything else, I just don’t have the time or energy to pour into complex recipes of any kind.
My kids will tell you that I burned them out on PB&J years ago. Plus, their school wouldn’t allow peanut butter due to nut allergies and my kids hated the nut-free butters (trust me, I tried).
Having my kids go on strike against eating PB&J sandwiches forced me to think outside my own box and come up with different (but still easy) lunch box ideas that aren’t sandwiches.

How To Make A Waffle Taco Bento Box Lunch
Step 1 – Preheat Oven
Preheat oven to 350 degrees.
Step 2 – Create Taco Shape And Bake
Turn a muffin tin upside down, place a waffle between muffin bowls to create a waffle taco shape. Bake waffle tacos for 4 – 5 minutes or until slightly crisped. Cool
Note: The waffle tacos should be firm/crispy enough to stand up independently.
Step 3 – Spread A Layer Of Peanut Butter
Spread peanut butter inside each waffle taco.
Step 4 – Stuff Waffle Tacos And Serve!
Gently stuff waffle taco with strawberries and blueberries.
Serve with syrup or yogurt for dipping and enjoy!

Taco Topping Bar – Give everyone what they love by creating a topping bar so your kids can assemble their own taco creations.
If you run out of waffles, try using tortillas!
Defrost waffles – Defrost waffles quickly by putting them in the microwave for 30 seconds to 1 minute, and adding 30 second increments until thawed to your preference. Or leave them on the counter for about 15 minutes.
How To Serve This Waffle Taco Recipe
- Dipping Sauce – Include a side of yogurt, syrup, or fruit jam for dipping.
- Protein – I love adding some sausage links, bacon strips, or eggs (prepared your favorite way) to help my kiddos stay full until they get home.

How To Store Waffle Tacos
I don’t recommend storing waffle tacos after making them. While they’ll be fine until lunchtime, they’ll get soggy and (in my opinion) gross, if you try to store them overnight.
