This easy cheesy rotini bake uses easy, simple ingredients. Here’s what you’ll need to gather. NOTE: Please refer to the handy printable recipe card at the bottom of this post for full recipe details.

  • Rotini Noodles -or substitute with your preference of pasta
  • Salt
  • Pasta Water – reserved
  • Spaghetti Sauce – your favorite homemade recipe or store-bought brand
  • Cottage Cheese – 2% or 4%
  • Egg – whisked
  • Cheese Mixture – shredded mozzarella cheese, cheddar, Parmesan, and Monterey Jack, OR a combination of your favorite cheeses
  • Parsley – fresh, for garnish

How To Make Baked Rotini

  1. Boil Water – Bring a large pot of water to a boil and add a teaspoon of salt and a teaspoon of olive oil (to keep the noodles from sticking together). Add noodles to the boiling water and cook rotini for approximately 8 minutes, or 2 minutes less than the instructions on the package, so that they cook to be al dente.
  2. Drain the Noodles – Drain the cooked rotini pasta, reserving the water they were cooked in. Add noodles back into the pot.
  3. Add Marinara Sauce – Add spaghetti sauce to the noodles.
  4. Preheat Oven – Preheat the oven while you are working on the next step.
  5. Mix Filling – Combine egg, cottage cheese, and shredded cheese mixture in a mixing bowl. Set the remaining shredded cheese aside.
  6. Add Noodles – Prepare a greased 9 x 13 pan. Place the noodles and sauce mixture into the baking dish and spread evenly in the bottom.
  7. Incorporate Cheese Mixture – Pour the cottage cheese mixture on top of the noodles and spread evenly.
  8. Add Layer of Cheese – Add the remaining shredded cheese as the top layer of the casserole dish.
  9. Bake and Garnish – Bake for approximately 25 minutes or until the cheese is bubbly. Garnish with fresh parsley or Parmesan cheese

Baked Rotini Notes And Expert Tips

  • Add some of the reserved pasta water to the emptied spaghetti sauce jar and shake. This will get all of the sauce out of the jar so none of the saucy goodness is wasted.
  • Pre-packaged shredded cheese contains anti-caking agents that do not create a smooth, gooey melt. Grate a block of mozzarella or provolone yourself if you have time for a better texture once the dish is baked.
  • Take the foil off the last few minutes at the end of baking so the cheese gets the yummy crispy, browned edges.
  • Allowing the dish to rest for five minutes before serving gives the dish time to settle and makes it easier to cut and serve.

Rotini Pasta Bake Storage

Put leftovers in an airtight container or covered baking dish and place in the refrigerator. The baked rotini will stay fresh for 3 to 4 days.

Freezing instructions – This dish freezes very well. You can freeze the fully assembled, unbaked casserole or freeze the entire baked dish or smaller portions for up to 3 months. Wrap it securely to prevent freezer burn and bake or reheat directly from frozen by adding some time to bake or thaw in the fridge overnight.

What other type of pasta could be used in this recipe instead of rotini noodles?

The best substitute for rotini is fusilli because of its similar shape. Fusilli will hold the flavorful sauces in the grooves of the noodles.
Penne and cavatappi are also great options as they will hold all the flavors and sauces in their ridges and coils.

Can I prepare the Baked Rotini dish ahead of time?

Yes! You can assemble the dish earlier in the day or the night before. Cover it tightly with aluminum foil and store it in the refrigerator. You may need to add an extra 5-10 minutes to the total baking time since the dish will be chilled when you take it out of the fridge.

  • 16 ounces rotini noodles
  • 1 tbsp salt
  • ½ cup pasta water, reserved
  • 4 cups spaghetti sauce
  • 16 oz cottage cheese
  • 1 egg whisked
  • 2 cups (reserve 1 cup) mixture of shredded mozzarella, cheddar, Parmesan, Monterey Jack, or 2 cups of your favorite cheese(es)!
  • Parsley, fresh (optional for garnish)

Instructions

  1. In a large pot, boil your water. Add one 1 TBSP salt. Once your water in boiling, add in your noodles. Cook for 8 minutes (2 minutes less than the instructions on the packaging as you want your noodles to be al dente.)
  2. Preheat your oven to 350°.
  3. Drain your noodles, and make sure you reserve your water. Place your noodles back in the pot. Add in your spaghetti sauce. Pour your reserved pasta water into your empty jars. Shake well to remove any leftover sauce. Pour that sauce water into the pot. Mix well.
  4. Add in your egg, cottage cheese, and one cup of the shredded cheese mixture. Set aside the shredded cheese.
  5. Place your noodle mixture into a greased 9 x 13 pan. Spread evenly. Pour the remaining one cup of these shredded cheese to the top layer of your dish. 
  6. Place your dish in the oven for about 25 minutes, or until the cheese is bubbly.
  7. Garnish with fresh parsley and/or Parmesan cheese! Enjoy!
