The 4th of July is one of my favorite holidays. It’s all fun and no pressure!

For this holiday, we do things like have a cookout, go to Water World or a baseball game, and we LOVE roasting s’mores in the backyard as we watch fireworks around the city (we live on a hill).

I love that it’s all about spending time outside, enjoying the outdoors, and making memories with loved ones and friends.

What’s not to love about that?

If you love the 4th as much as we do, try making a Sugar Cookie American Flag Fruit Pizza to go with this delicious poke cake.

Recipe Tips

  • Although you could technically use yellow cake, white cake works much better for red, white, and blue poke cake so you can really see the colors!
  • When you mix up the boxes of blue Jello and red Jello (in separate bowls), don’t forget to use ½ cup less cold water than the instructions call for.
  • I like to use a spoon to direct the Jello where I want it in the cake so that I can get those clear red and blue areas. Concentrate on getting the liquid into the holes which makes those splashes of color in the white cake.
  • Another option is to put the Jello in a squeeze bottle which will give you more control over where the liquid Jello goes.
  • Ok, the cake is going to look pretty wet and soupy after you pour in the Jellos. But trust me – the refrigerator will transform it as the jello sets! The liquid Jello will firm up and make probably the softest, most delicious cake of all time.
  • Have fun decorating! The whipped cream on top of your Red, White & Blue Poke Cake is a blank canvas. Add berries (blueberries and strawberries or raspberries), swirls of food coloring, maraschino cherries, or fun patriotic sprinkles!

What do you use to poke holes in a cake?

handle or end of a wooden spoon
dowel
end of a chopstick
