Just kidding! Spring is my favorite season, But since strawberries start growing and ripening in the spring, I’d say they go hand in hand!

Our whole family loves pancakes, so we make them regularly. When I want to take a break from our typical protein pancakes, I make these strawberry pancakes with everyday ingredients and fresh strawberry flavor in every bite!

They’re just as easy to make as regular pancakes, and they look so special.

How to Make Strawberry Pancakes

Grab these simple ingredients and follow the simple process below – your strawberry pancakes will be ready in minutes!

Ingredients

  • All-purpose flour – you can use whole wheat flour if you prefer
  • Milk – you can use your favorite milk or non-dairy milk
  • Fresh strawberries – diced
  • Sugar – I use granulated sugar, but you could also use brown sugar for a slightly more caramel flavor.
  • Salt
  • Baking soda and baking powder
  • Eggs
  • Butter – melted. I use unsalted butter, but you can use salted butter and cut out the salt called for in the recipe.
  • Vanilla – optional but delicious!

Kitchen Tools Needed

Non-stick skillet or Griddle – I highly recommend using a griddle to cook your pancakes. It cooks more evenly and you can make more at once than in a large skillet. Plus, it has low sides, making it easier to flip your pancakes!

Instructions

Step 1 – Combine strawberries and sugar and set aside.

Step 2 – Mix together the remaining dry ingredients

Step 3 – Add the melted butter and eggs to the dry ingredients and mix until well combined. Gradually pour in the whole milk while stirring the batter.

Mix batter until the wet ingredients and dry ingredients are combined and mostly smooth (a few small lumps are fine).

Step 4 – Gently fold the strawberry mixture into the pancake batter.

Step 5 – Heat a large skillet or griddle over medium heat.  Once your pan is hot, spoon approximately 1/3 cup of the pancake batter onto the skillet for each pancake.

Step 6 – Cook until bubbles form on the surface of the pancake, then flip and cook for another minute or until golden brown.  Repeat the process with the remaining batter, adjusting the heat if necessary to prevent burning.

Serve your fluffy pancakes warm and top them with your toppings of choice! Enjoy!

Here is how you can make these fluffy strawberry pancakes perfectly every time!

  • Don’t Over Mix – Mix until the ingredients are just combined. Over mixing to get all the lumps out can make the pancakes tough and flat instead of fluffy and light.
  • Allow time for your batter to rest – your pancakes will be fluffier and oh-so-good!
  • Choose fresh, ripe strawberries for the best flavor. Smell them to determine if they’re ripe – you’ll know!
  • Check that your baking powder hasn’t expired. If your pancakes don’t turn out light and fluffy, the likely culprit is old baking powder.
  • Increase protein by adding a little bit of protein powder – Vanilla or unflavored is best so it doesn’t ruin the flavor of your pancakes.
  • Freeze-dried strawberries – You can swap out the fresh berries for freeze-dried berries. However, you may need to add a little extra milk to get the right amount of moisture.
  • Make them for the 4th of July and top them with fresh strawberries, blueberries, and sliced bananas with some fresh whip cream for a red, white, and blue treat!

Make Strawberry Pancakes Dairy-Free

Dairy is easy to eliminate from this recipe. You can swap out the butter for a mild-flavored oil such as vegetable oil (I prefer light olive oil). Swap out the milk for a non-dairy alternative such as rice milk, oat milk, soy milk, etc.

Make Gluten-Free Strawberry Pancakes

Although I haven’t tried making this recipe gluten-free, I have successfully made other pancake recipes gluten-free by swapping out the flour for a gluten-free all-purpose flour blend. They have gotten so much better in the last few years!

Storage and Reheating

Store cooled leftover pancakes in an airtight container in the fridge for 3-4 days. I highly recommend placing a small sheet of wax or parchment paper between each pancake so they don’t stick together.

Freezing

To freeze, let them cool completely. Then stack them in a freezer bag or airtight container with a piece of parchment or wax paper in between pancakes to avoid sticking. Freeze for up to 3 months.

My favorite way to thaw and heat is to pull out the number of pancakes you want and let them sit at room temperature for just a few minutes.

How to reheat

This applies to both thawed and refrigerated pancakes. Heat them up in the microwave – or, even better – in the toaster oven so they get just a little crispy on the edges!

Should I let the batter rest before cooking?

Yes, resting the pancake batter allows the gluten in the flour to relax and leaveners (baking powder and baking soda) to work, giving you fluffier pancakes!

Can I use frozen strawberries in this recipe?

Sadly, I wouldn’t recommend it. Frozen strawberries have a much different texture and higher liquid content than fresh berries. Although I’ll admit I haven’t tried, I think if you try using frozen berries, your pancakes will be soggy.

That said, if you try it (and I would recommend draining the berries once thawed) – let me know how your pancakes turn out!

Can I use other fruit in this recipe?

Absolutely! Try fresh berries like blueberries, raspberries, blackberries, or even sliced bananas in place of the strawberries if desired.

  5. Heat a skillet or griddle over medium heat.  Once the skillet is hot, ladle approximately 1/3 cup of the pancake batter onto the skillet for each pancake.
