Easy Homemade Spiced Eggnog Waffles Recipe

There’s something magical about waking up to the smell of holiday spices, and these eggnog waffles deliver that delicious eggnog flavor and festive coziness in every bite. These crowd-pleasing waffles are crisp on the outside, fluffy on the inside, and infused with all your favorite flavors that make this season feel special.

Recently, one of my kids requested waffles for breakfast, but he wanted a different flavor than classic waffles. I had just made a batch of eggnog, so as I was thinking about new waffle recipes, the holiday flavor of eggnog inspired this idea and recipe!

Because you can never have enough eggnog during the holidays!

Eggnog is so rich and creamy and delicious. It makes perfect sense that it would make amazing waffles (or pancakes)! I have to say, I’m in love with this new holiday season (or Christmas morning) breakfast treat!

It’s my new favorite way to enjoy homemade waffles , and it’s on my menu plan for Christmas breakfast (and maybe New Years) this year!

Ingredients Needed For Eggnog Waffles Recipe

The main difference between these delicious eggnog waffles and classic waffles is the addition of eggnog. Here are a few key ingredients for this recipe:

  • All-purpose flour – gluten-free flour or whole wheat will work as well.
  • Brown Sugar – adds a rich flavor that complements the creamy eggnog.
  • Eggnog – store-bought or homemade
  • Milk – 2% or whole
  • Unsalted Butter – melted
  • Vanilla Extract
  • Ground Nutmeg – plus extra for garnish
  • Optional Toppings – Whipped cream, maple syrup, caramel sauce, ground cinnamon, ground nutmeg, chopped nuts, cranberries

How To Make Eggnog Waffles

  1. Preheat waffle iron
  2. Mix dry ingredients – In a large bowl, add flour, brown sugar, baking powder, and ground nutmeg. Whisk ingredients until mixed thoroughly.
  3. Mix wet ingredients – In a medium bowl, combine eggnog, milk, melted butter, eggs, and vanilla extract. Whisk together until combined.
  4. Combine – Incorporate the wet ingredients and flour mixture together and mix until just combined. Do NOT overmix. A few lumps are acceptable.
  5. Cook Waffles – Grease the waffle iron with non-stick spray. Add batter according to the size of your waffle maker. Cook until the waffle is golden brown.
  6. Serve – Place the cooked waffle on a plate. Top with your desired toppings such as whipped cream, maple syrup, or caramel sauce. Sprinkle with cinnamon or nutmeg, or any of your favorite toppings. Happy Holidays!

Eggnog Waffles Notes And Expert Tips

Here are some tips to help ensure your fluffy eggnog waffles are perfect every time you serve them!

  • Stop mixing your waffle batter once it’s combined to avoid over-mixing, which causes the gluten in the flour to stiffen and will give you dense, tough waffles.
  • Make Ahead: Prepare the batter and refrigerate it for up to 24 hours before using. Stir the batter before cooking.
  • Waffle maker: Keep in mind that the size of your waffle maker will depend on how many waffles you yield from this recipe.
  • ALWAYS preheat the waffle maker fully before adding the batter.
  • If making a larger batch of waffles, preheat the oven to 170 degrees and place the cooked waffles in the oven while you finish cooking. This will keep the waffles crisp and warm until it’s time to serve.
  • PRO TIP: Don’t fill the bottom of the waffle maker with batter. Use about 1/4 cup to 1/2 cup of batter and pour it in the center of the waffle maker. Close and allow the batter to fill in to the edge of the waffle maker. This will keep the batter from oozing out the sides.

How To Serve Eggnog Waffles

Maple syrup and homemade whipped cream are our go-to toppings.

For a festive, holiday touch, serve with cherry, strawberry, blueberry, or cranberry compote.

Add sliced bananas!

Oooohhhhh…..cinnamon whipped cream. That sounds DELISH!!!

Serve your eggnog waffles with a mug of delicious, rich hot chocolate topped with a dollop of whipped topping.

Honey or caramel sauce also make amazing toppings for these eggnog waffles.

Some tasty and unique toppings for your eggnog waffles can include sliced bananas, honey, blueberries, raspberries, maple syrup, or caramel sauce.

Drop in mini or regular chocolate chips to the batter. Semi-sweet or milk chocolate will be perfect in the recipe.

Toasted coconut is a unique and delicious addition as a topping.

Make It Gluten-Free 

These waffles can very easily be made gluten-free. Substitute gluten-free flour in place of the all-purpose at a 1:1 ratio.

In addition, keep in mind that most brands of eggnog are gluten-free, but a few are not. Make sure you have a gluten-free brand.

Make It Dairy-Free

Several ingredients in this recipe will need to be substituted to make this recipe dairy-free.

Vegan or dairy-free substitutions will need to be made for the eggnog, milk, unsalted butter, and whipped cream

While I have not made a dairy-free version, you would need to swap out the regular eggnog for a vegan version. Use your favorite egg replacement for the eggs and plant-based butter and whipped cream.

Make It Nut-Free

With the pecans and walnuts being optional, simply do not add them as a topping at the end.

Eggnog Waffles Storage

Allow waffles to cool completely, place in an airtight container or storage bag, and store in refrigerator for up to 3 – 4 days. To reheat, place waffles in a toaster or toaster oven for 1 – 2 minutes until warm and crispy.

Freezing instructions – These waffles can totally be frozen! After cooking, cool waffles to room temperature, place them in a freezer bag, and store in the freezer for up to 3 months. To reheat, place the frozen waffle directly into a toaster or toaster oven. Heat for approximately 2 minutes until crispy and warm.

Eggnog Waffles FAQs

Can I use this batter to make pancakes instead of waffles?

The waffle batter is a little too thick for pancakes, so add a splash or two of eggnog, to thin it down enough to make some very delicious eggnog pancakes.😋

Why are my cooked waffles soggy?

Great question! There are several reasons this may happen. Either the waffle iron was not fully preheated, or the waffle was slightly undercooked when taken out of the waffle maker.

Can this recipe be doubled or tripled?

Absolutely! That is a great idea for feeding large groups or for freezing leftovers. You can bake the waffles and store half in the freezer and the other half in the refrigerator for a quick, easy breakfast or a breakfast-for-dinner meal.

  • 2 cups all-purpose flour
  • 2 tbsp brown sugar
  • 1 tbsp baking powder
  • 1 cup eggnog (store-bought or homemade)
  • 1/2 cup milk
  • 1/3 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground nutmeg (plus extra for garnish)

Topping

  • whipped cream
  • maple syrup or warm caramel sauce
  • additional nutmeg or cinnamon for sprinkling
  • Optional: Chopped nuts (pecans or walnuts) or cranberries for extra festive flair

Instructions

  1.  Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, and ground nutmeg.
  3. In another bowl, whisk together the eggnog, milk, melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
  5. Lightly grease the waffle iron with non-stick spray or melted butter. Pour an appropriate amount of batter onto the preheated waffle iron (amount may vary depending on the size of your waffle maker) and close the lid.
