How to Make Lemon Roasted Chicken
Prep The Chicken
- Preheat – Begin by preheating the oven.
- Clean and Dry – Remove the giblets package from the cavity and pat the chicken dry using paper towels.
- Season and Stuff – Add salt, pepper, and dry rosemary to the cavity of the chicken. Stuff the cleaned and dried cavity with a halved lemon and garlic cloves
- Flavoring the exterior – Season the outside of the chicken by rubbing it with salt, pepper, and softened butter. Slide lemon slices under the skin on the breast side to add additional citrus aroma.
Truss
- Tie – Using kitchen twine, tie the chicken’s legs together.
- Tuck – Tuck the tips of the wings under the body. This will prevent them from burning.
Roast
- Prepare Roasting Pan – Put the chicken, breast-side up, in a large roasting pan and lightly drizzle with olive oil. Add some lemon slices and herbs to the roasting pan for extra flavor, if desired.
- Roast – Cook the chicken for about 60 – 70 minutes or until the skin is golden brown. Insert a meat thermometer into the thickest part of the thigh, avoiding the bone. Once the temperature reaches 165°F or higher, the chicken is fully cooked and safe to enjoy. Place an aluminum foil tent over the chicken if it is browning too fast.
Resting
- Remove Chicken – Take the roasting pan out of the oven and allow the chicken to rest for at least 10 – 15 minutes before carving. This will keep the chicken moist and the juices on the inside.
Carving
- Carve – Using a sharp knife, slice the thighs, drumsticks, breasts, and wings.
- Serve – Serve with the cooked lemon slices from the pan, if you prefer.

- If using a meat thermometer, start checking the temperature at 60 minutes into cooking. Larger chickens may take longer to cook.
- Dried herbs are much stronger and more concentrated in flavor than fresh herbs because the water has been removed. If you prefer to use fresh herbs, the rule of thumb is 1 tablespoon of fresh herbs versus 1 teaspoon of dried herbs.
- Basting the chicken with the juices from the pan will help with added moisture and extra color on the skin.
